Beets time

While shopping for the split pea soup ingredients, we saw that golden beets were on sale. Golden beets! The last time we had golden beets was in my salad at Gordon Ramsay’s Boxwood Cafe. It was the salad that got me sold on beets! They were served with a bit of frisée and a very light dressing. Since then I’ve enjoyed eating beets more!

The recipe we used to eat our beets was really simple. We boiled the beets for 20 minutes, cooled them down and then peeled the skin off. Here’s what the boiled beet looks like:

Next we cut them up and marinated them in olive oil, red wine vinegar, chopped garlic, salt and chives. We served it with a bed of mixed baby greens. Here’s the final result:

So good!!! Why should you try beets? Bc they are full of iron! Ladies, make sure you’re getting iron!! 🙂
